1、性質
性狀：白色結晶性顆粒或結晶性粉末，無臭無酸味，有特殊貝類滋味，味覺閾值0.03%，易溶于水（20℃，35g/mL），不溶于乙醇，分為結晶丁二酸二鈉與無水丁二酸二鈉，食品工業中最常用的是晶體丁二酸二鈉，通常含有6個結晶水，其中結晶丁二酸二鈉在120℃時完全失去結晶水。
別名：琥珀酸二鈉，俗稱干貝素

2、實際應用
醬油、醋、辣醬油、調味湯（料）、醬菜、香腸火腿、魚糜制品等食品中。
1、應用在醬菜制作當中
1）什錦醬菜　溶液180升，添加干貝素450g
2)喬頭（韭白）　溶液180升，添加干貝素220g
3)醬山野菜（山葵）　山野菜液 10kg，添加干貝素30~40g
4)應用在腌制醬咸菜當中，原液10kg，添加50g
2、醬油、辣醬油（溶于水中后使用不會產生不均勻性），180升中添加26-56g和谷氨酸鈉并用，并用時，用量是谷氨酸鈉的10%-15%，這樣會非常美味。
3、加工豆醬產品。3.75kg兌約1g左右，味道會更好。
4、制造合成醋，4%的醋酸溶液180升，加入約350-400g的干貝素,特別是和本公司的單福馬酸一起使用，結果將會使強烈的刺激性香味得到中和，而且由于單福馬酸的作用，可以去掉過剩的酸，而產生完美的酸味。
5、灌裝水產物、煮魚及其他相對谷氨酸鈉的使用量，添加10-20%，能使味道更加美好，特別是貝類罐頭。
3、藥用價值
干貝素是廣泛存在于海藻和海洋生物的有機酸鹽, 因有貝類鮮味而得名。干貝素又稱琥珀酸鈉( sodium succinate) , 琥珀酸( sodiumsuccinate) 是鎮驚息風的經典中藥琥珀的有效成分, 也是體內三羧酸循環的中間代謝物, 其化學結構與腦內神經遞質γ-氨基丁酸( GABA) 和牛磺酸類似, 具有多種藥理效應, 其生物活性已有綜述。化學性點燃癲癇動物模型已證明腹腔注射干貝素有抑制作用, 具有藥用價值。
